Actually, that's a good thing. By coincidence the same happens with me. Newton reads the amount of side to side motion and that determines where something is declared out of saddle. I am thoroughly impressed! By taking advantage of the wind display you don't have to worry about chasing wildly fluctuating power numbers. Just stay in the pack and break out only when you absolutely have to.

There is no need to analyze tilt plot since the newer units are all auto correcting. As I suggested, enter your starting and ending elevation, uncheck all other boxes and move on.

As a curiosity I switched from fahrenheit to celsius and put my unit in the freezer. It went to -15C as I expected. Where I live right now, there's no chance of seeing anything below 10C so I don't know what to say. Have you seen this on other rides? Is this a one time hiccup?

Normalized power generally doesn't work well for intervals, especially less than 10 minutes. It takes a fair amount of time to get settled in and is easily skewed on short periods. For a long ride it's a great metric that gives a good idea of effort. I think you're better off with AP and do your bes...

Check your zero recording option on the Garmin. It affects both power and cadence averages. You should turn trainer mode on as the wind is crazy low and so are the watts. You can fix this to a certain extent by clicking tools > repair > blocked wind sensor. Strava does not require GPS data as you can declare the ride a "trainer" ride.
It may be that GPS data was recorded but since you were on a trainer it's just the bouncing around because of a poor GPS signal inside. Try shutting off the GPS data on your next trainer ride, that may solve it.

I am not so sure that coast downs will help. Perhaps raise your wind scaling slightly, this is something that generally does not affect climbing. I mean SLIGHTLY!

However not too long ago you did an FTP test and the profile from that test was with a wind scaling of 1.144. The FTP test you did today has a wind scaling of 2.060!
