The two values are rider weight and total weight which is bike plus gear plus rider weight. Total weight is used in the power algorithm so it is the most important. Rider weight is only used for W/kg and for initial CdA estimate.
If you aren't doing what John said, you are doing it wrong :)

You only need to do one cal ride per bike to get your wind scaling factor.
Then do a set of coast downs to get your CdA and Crr.
Cal rides don't determine Crr - they just work out your wind scaling factor and riding tilt. So no need to do one on a trail.

Could be your tilt calibration is out. Look at the Hill readings next time in the first ten minutes. Chances are it thinks you are going downhill until it does its internal auto correction.

You may need to clarify whether by "wind calibration" you mean the Wind Cal option in Newton setup or the Cal ride If you've done a proper Cal ride you should not be getting weird wind factors. That includes letting Newton settle to ambient temperature then do a Wind Cal in a sheltered loc...

Check your recording parameters on the Garmin. Are you using Smart recording which drops readings? Is zero averaging off? This causes the Garmin to ignore zero readings.
No need to calibrate the power meter. I never get that prompt although could be because I'm using an old Edge 705
