I seem to remember reading in this forum that the PP is collecting data at 800 Hz or something like that. Also, that the whole system is based on calculation made from information gathered from an accelerometer. I'm wondering if that data can be accessed outside the isaac software to be used for so...

You can view this data only in Isaac. There's some sophisticated analysis involved that can't be done on a Garmin. What's the point of this software element being 1/3 the price of the unit? Does it really add that much value? Can I see this data on my garmin?

If your PP moves then, over the next 8 minutes, it will recalibrate itself automatically. You don't have to do anything. Make sure your mount is solidly attached so that it cannot rotate.
