I just downloaded a software upgrade which includes Gear Ratio. I am looking to understand the Gear Ratio information, could someone give me an explanation please.

Gear ratio is simply (# of ring teeth)/(# of cassette teeth). For example, my highest gear is 53/12 = 4.42 and my lowest gear is 39/25 = 1.56. It is calculated based on the speed and cadence data and it is simply a measure of how many revolutions of the wheel you get for each revolution of the crank.

What is this Gear Ratio information useful for:
1.) Is this data useful for helping to make improvements? If so, how?
2.) Is it useful for comparing fitness/performance with previous rides?

You can use this information to see the relationship between cadence and gears chosen. If your gear ratio remains the same on climbs, then you aren't using your gears effectively to manage your effort.
