I'm not familiar with a Saris speed sensor. Please send photos of it as mounted on your bike. Are you using it with a magnet? If so send photos of magnet/sensor too. The calibrate button does nothing with PowerPod; ignore it.
I don't know about the Wahoo battery level feature. Garmin units report battery level correctly.

Most likely you are press-holding the button for 12 seconds, causing a hard reset.
When you connect your unit to Isaac the correct time/date will be stored. Make sure to click your button only to awaken your unit.

I usually ride 10 seconds to wake up my speed/cadence sensors, then click the PP button.

I think your unit is operating just fine. For the first 90 seconds of a ride the unit automatically self calibrates. During this period you might see low (or high) watts. In your case watts were low. The calibration looks fine, although at mile 22 it looks like your unit was bumped out of position. PP automatically corrected this problem after a few minutes. In this situation it is difficult to tell if your V3 is properly calibrated, though I don't see any obvious problem in your profile settings. Could you advise how to redo the out-and-back cal ride? I will redo the cal ride and will go for an actual ride before sending the data in here for your review. The ride file you reference in your original email is not the cal ride. It is a "normal" ride; .ibr ride file. Please post that ride file.
